  • 12 lasagna noodles
  • 2 cups cottage cheese
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook lasagna noodles in boiling salted water until al dente, about 8 minutes. Drain and lay flat on parchment paper.
  3. In a bowl, mix cottage cheese, chopped spinach, garlic powder, and Italian herbs until combined.
  4. Spread 2 tablespoons of the filling on each noodle and roll tightly. Place seam-side down in the baking dish.
  5. Pour marinara sauce over the roll-ups and sprinkle mozzarella cheese on top.
  6. Cover with foil and bake for 25 minutes; remove foil during the last five minutes to brown the cheese.
