Instructions
- Rinse quinoa under cold water. Combine with 2 cups of water in a saucepan, bring to a boil, then reduce heat and simmer for about 15 minutes until liquid is absorbed.
- In a skillet, heat olive oil over medium heat. Sauté spinach until wilted (about 3-4 minutes).
- Whisk together eggs with salt and pepper; scramble them in the skillet after removing spinach until cooked through (about 3 minutes).
- Preheat oven to 400°F (200°C). Roast halved cherry tomatoes on a baking sheet drizzled with olive oil for 15-20 minutes.
- In meal prep containers, layer cooked quinoa, sautéed spinach, scrambled eggs, roasted cherry tomatoes, avocado slices, and crumbled feta.
- Season each bowl as desired and store in the fridge for up to five days.
