  • 8 oz pasta of choice (spaghetti or fettuccine)
  • 2 cups fresh mushrooms (cremini or button), sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a skillet over medium heat, melt butter. Add sliced mushrooms and minced garlic; sauté until golden brown (5-7 minutes).
  3. Pour in heavy cream and stir to mix with mushroom bits. Simmer for 5 minutes until slightly thickened.
  4. Stir in Parmesan cheese until melted. Season with salt and pepper. If too thick, add reserved pasta water gradually.
  5. Toss the cooked pasta into the skillet with the sauce until well coated.
  6. Plate the pasta and sprinkle with chopped parsley before serving.
