  • 4 cups low-sodium chicken or vegetable broth

  • 2 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Chop the onion and garlic finely.
  2. In a large saucepan over medium heat, melt butter with olive oil. Sauté onions until translucent (3-4 minutes), then add garlic and cook for an additional minute.
  3. Stir in Arborio rice and toast for about 2 minutes until slightly golden.
  4. Gradually add warm broth one cup at a time, stirring continuously until absorbed before adding more. This should take about 18-20 minutes until the rice is al dente.
  5. Remove from heat and mix in grated Parmesan cheese until creamy.
  6. Serve garnished with extra Parmesan, black pepper, and herbs if desired.
