  • 2 lbs pork shoulder, diced
  • 1 lb fresh tomatillos, husked and rinsed
  • 2 jalapeños, chopped (seeds removed for milder flavor)
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 2 cans (15 oz each) hominy, drained
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear diced pork until browned on all sides.
  2. Add chopped tomatillos and jalapeños; cook until slightly softened.
  3. Pour in chicken broth and add drained hominy. Bring to a gentle boil, then reduce heat to low. Simmer for about 1 hour or until pork is fork-tender.
  4. Stir in chopped cilantro and lime juice just before serving.
  5. Garnish with additional cilantro, lime wedges, sliced radishes, or tortilla strips as desired.
