  • 46 lbs Prime Rib Roast
  • 2 tbsp coarse kosher salt
  • 1 tbsp freshly cracked black pepper
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary, chopped
  • 1/2 cup prepared horseradish
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 450°F (232°C) and set aside a roasting pan.
  2. Pat the prime rib dry and season generously with salt and pepper. Rub minced garlic and chopped rosemary over the roast.
  3. Place roast in the hot oven for 20 minutes to sear.
  4. Reduce temperature to 325°F (163°C) and roast until desired doneness (about 1 hour for medium-rare).
  5. While resting the roast for at least 20 minutes, mix horseradish and sour cream in a bowl.
  6. Slice against the grain, drizzle with sauce, and serve.
