Description

Ingredients

  • 2 packs instant ramen noodles (discard the flavor packets)
  • 1 cup bell peppers, chopped
  • 1 cup carrots, shredded
  • 1 cup cucumbers, sliced
  • 4 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar (optional, to taste)

Instructions

  1. Cook ramen noodles according to package instructions. Drain and rinse under cold water to cool.
  2. While noodles cool, chop bell peppers, shred carrots, slice cucumbers, and chop green onions.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, and optional sugar.
  4. In a large mixing bowl, combine cooled noodles with chopped vegetables. Pour dressing over and toss to coat evenly.
  5. Garnish with chopped cilantro before serving.
