  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil

  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bake the washed potatoes for 45-60 minutes until tender. Poke them with a fork to prevent bursting.
  3. Season chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a skillet over medium heat and cook chicken for about 6-7 minutes per side until golden brown.
  4. Shred the cooked chicken and mix it with salsa and cheese in a bowl until well combined.
  5. Allow potatoes to cool slightly, then slice them open lengthwise and fluff the insides. Stuff each potato generously with the chicken mixture.
  6. Return stuffed potatoes to the oven for an additional 15-20 minutes until heated through and cheese is bubbly.
