  • 1 lb beef sirloin, thinly sliced
  • 4 oz cellophane noodles
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, julienned
  • 3 green onions, chopped
  • 1/2 cup peanut sauce (store-bought or homemade)
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice

Instructions

  1. Soak cellophane noodles in hot water for about 10 minutes until soft; drain and set aside.
  2. In a bowl, mix peanut sauce with soy sauce and lime juice until smooth.
  3. Heat oil in a large skillet over medium-high heat. Add sliced beef and stir-fry for about 4-5 minutes until browned.
  4. Add prepared vegetables and stir-fry for another 3 minutes until tender.
  5. Lower heat to medium-low and add softened noodles along with the sauce mixture; toss until evenly coated.
  6. Transfer to a clay pot or serving dish, garnish with cilantro, and enjoy!
