  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 6 cups low-sodium chicken broth
  • 2 tsp dried Sicilian oregano
  • Zest and juice of 1 lemon
  • ¼ cup fresh parsley, chopped
  • Red pepper flakes (optional)

Instructions

  1. Prep your ingredients by washing and chopping all vegetables.
  2. In a large pot over medium heat, heat olive oil and sauté chopped onions until translucent (about 5 minutes). Add garlic, carrots, and celery; cook until softened.
