  • 34 lbs beef chuck roast
  • 1 medium onion, thinly sliced
  • 45 cloves garlic, minced
  • 1 cup barbecue sauce (your choice)
  • 1 cup low-sodium beef broth
  • Salt to taste
  • Pepper to taste
  • 1 tsp smoked paprika

Instructions

  1. Slice the onion and mince the garlic.
  2. Sear the chuck roast in a skillet over medium-high heat until browned on all sides.
  3. Place the seared roast in a slow cooker and layer with onions and garlic.
  4. Pour barbecue sauce over the meat and add enough beef broth to cover half of it.
  5. Season with salt, pepper, and smoked paprika.
  6. Cover and cook on low for 8 hours or high for 4 hours until tender.
  7. Shred the beef with two forks in the pot and mix well with the sauce before serving.
