  • 2 lbs beef chuck roast, cut into chunks
  • 12 oz egg noodles
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • ¼ cup low-sodium soy sauce
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and season generously with salt and pepper.
  2. In a skillet over medium heat, sauté chopped onions and minced garlic until soft and fragrant (about 5 minutes).
  3. Place beef chunks in the slow cooker. Pour the sautéed onion and garlic mixture over the beef, then add soy sauce, Worcestershire sauce, and beef broth.
  4. Cover and cook on low for about 8 hours.
  5. Add egg noodles to the slow cooker during the last 30 minutes of cooking; stir gently to coat with sauce.
  6. Serve hot, garnished with fresh parsley if desired.
