  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cans (14.5 oz each) diced tomatoes in juice
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 3 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and set aside.
  2. 2. Sauté the diced onion and minced garlic in the same skillet until softened (about 5 minutes), then transfer to the slow cooker.
  3. 3. Add chopped bell peppers, diced tomatoes (with juice), kidney beans, black beans, chili powder, cumin, salt, and pepper into the slow cooker. Stir well to combine.
  4. 4. Cover and cook on low for 6 hours or high for 4 hours.
  5. 5. Before serving, taste and adjust seasoning if needed. Serve hot with desired toppings.
