  • 3 pounds boneless corned beef brisket
  • 1 medium head green cabbage, cut into wedges
  • 4 medium carrots, sliced into thick rounds
  • 4 Yukon Gold potatoes, quartered
  • 4 cups low-sodium beef broth
  • Spice packet included with corned beef

Instructions

  1. Prepare vegetables by washing and cutting the cabbage, carrots, and potatoes.
  2. Layer the vegetables in the bottom of the slow cooker.
  3. Place the corned beef brisket on top of the veggies and add enough beef broth to cover half of it.
  4. Sprinkle the spice packet over the brisket and cover with a lid.
  5. Cook on low for 8-10 hours or high for 4-6 hours until tender.
  6. Remove from the slow cooker, slice against the grain, and serve with the vegetables.
