  • 1 lb lean ground beef (80/20)
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 large Yukon Gold potatoes (about 1 lb), peeled and quartered
  • 2 tbsp butter
  • ½ cup milk

Instructions

  1. Peel and chop the potatoes into quarters; place them in cold water over medium heat until tender (15-20 minutes). Meanwhile, chop the onion and carrots.
  2. In a skillet, brown the ground beef with onions and garlic over medium heat (7-10 minutes); drain excess fat if needed.
  3. Transfer the meat mixture to a slow cooker; add diced carrots, peas, Worcestershire sauce, thyme, beef broth, salt, and pepper; stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Drain cooked potatoes, return them to the pot; add butter and milk; mash until smooth and season with salt.
  6. Scoop the meat mixture into bowls and top generously with mashed potatoes. Serve immediately with crusty bread.
