  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 sprigs fresh thyme

  • 2 tbsp unsalted butter (softened)

Instructions

  1. Preheat your sous vide water bath to 129°F (54°C) for medium-rare.
  2. Season the ribeye steak generously with sea salt and black pepper.
  3. Place the seasoned steak in a vacuum-seal bag with thyme and rosemary, then seal tightly.
  4. Cook in the preheated water bath for 1-2 hours.
  5. While cooking, mix softened butter with chopped herbs; refrigerate until ready to use.
  6. After cooking, pat the steak dry and sear it in a hot cast-iron skillet for about 1 minute per side.
  7. Serve drizzled with herb butter.
