Ingredients

  • 1 lb ribeye or sirloin steak (about 1 inch thick)
  • 4 tbsp unsalted butter (softened)
  • 4 cloves fresh garlic (smashed)
  • 2 tbsp fresh parsley or thyme (chopped)
  • Salt and pepper, to taste
  • 1 tbsp lemon juice (for sauce)

Instructions

  1. Preheat a heavy skillet over medium-high heat until it's smoking hot. Season both sides of the steak generously with salt and pepper.
  2. Place the seasoned steak in the hot skillet and sear undisturbed for 4-5 minutes until a crust forms. Flip and cook for an additional 4-5 minutes.
  3. Add smashed garlic and butter to one side of the pan. Let it melt, mixing with the steak juices.
  4. Tilt the pan to pool juices, basting the steak with melted garlic butter until cooked to desired doneness.
  5. Remove from heat and let rest for 5 minutes before slicing against the grain.
  6. Drizzle leftover garlic butter on top and garnish with fresh herbs and lemon juice.
