  • 2 large eggs
  • 2 tsp vanilla extract

  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream the softened butter and sugar until fluffy. Beat in the eggs one at a time and add the vanilla extract. Gradually mix in the dry ingredients until just combined.
  3. Drop rounded tablespoons of dough onto prepared sheets about 2 inches apart.
  4. Bake for 12-15 minutes until edges are lightly golden. Allow cooling on wire racks.
  5. While cookies cool, whip the heavy cream until soft peaks form; fold in chopped strawberries for the filling.
  6. Assemble cookies by generously spreading strawberry cream between two cookie halves.
