  • 1 cup cooked rice (white or brown)
  • 1 lb ground beef or turkey
  • 3 large bell peppers (mixed colors), sliced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Add ground meat to the skillet, breaking it apart and cooking until browned (about 8 minutes). Drain excess grease.
  4. Stir in cooked rice and diced tomatoes. Season with garlic powder, Italian seasoning, salt, and pepper.
  5. Layer half of the mixture in the prepared baking dish. Place sliced bell peppers on top, then add the remaining mixture.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
