  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. In another bowl, beat softened butter and sugar until light and fluffy. Mix in the egg and vanilla extract, then add dry ingredients until combined.
  3. Spread half of the cookie dough into the bottom of the prepared pan. Bake for about 10 minutes until just set.
  4. In a large bowl, beat softened cream cheese until smooth. Add sour cream and sugar; mix until fully incorporated. Beat in the egg until smooth.
  5. Pour cheesecake filling over baked crust and crumble remaining cookie dough on top. Bake for an additional 25–30 minutes until edges are set but center has a slight jiggle.
  6. Cool completely before slicing into bars.
