  • 8 oz pasta (penne or fettuccine)
  • 1 cup sun-dried tomatoes (packed in oil)
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add sun-dried tomatoes and sauté for another 2 minutes until heated through.
  4. Pour in heavy cream, scraping any bits from the bottom of the skillet. Let simmer for about 5 minutes until slightly thickened.
  5. Stir in grated Parmesan cheese until melted and combined.
  6. Add the drained pasta to the skillet, mixing well with the sauce. If needed, add reserved pasta water for desired consistency.
  7. Finish by tossing in fresh basil leaves before serving.
