Description

Swamp Soup is a vibrant and hearty dish that combines fresh vegetables, tender chicken, and aromatic spices in a comforting broth. This delightful soup is perfect for chilly evenings or gatherings with friends, offering a burst of flavor in every bite.


Ingredients

  • 1 lb boneless chicken thighs
  • 2 cups baby spinach
  • 1 cup carrots (chopped)
  • 1 cup celery (chopped)
  • 1 cup small pasta shells or ditalini
  • 4 cups chicken stock
  • 2 tsp Herbs de Provence
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop the carrots, celery, and spinach into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté boneless chicken thighs seasoned with salt and pepper until browned (about 5-7 minutes).
  3. Add chopped carrots and celery to the pot; stir for another few minutes until slightly softened.
  4. Pour in the chicken stock and sprinkle with Herbs de Provence. Bring to a light boil before reducing to a simmer.
  5. After about ten minutes of simmering, add pasta shells and cook according to package instructions (about 8-10 minutes).
  6. Stir in fresh spinach just before serving. Enjoy!
