- 1 lb boneless chicken thighs
- 2 cups baby spinach
- 1 cup carrots (chopped)
- 1 cup celery (chopped)
- 1 cup small pasta shells or ditalini
- 4 cups chicken stock
- 2 tsp Herbs de Provence
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash and chop the carrots, celery, and spinach into bite-sized pieces.
- In a large pot over medium heat, add olive oil and sauté boneless chicken thighs seasoned with salt and pepper until browned (about 5-7 minutes).
- Add chopped carrots and celery to the pot; stir for another few minutes until slightly softened.
- Pour in the chicken stock and sprinkle with Herbs de Provence. Bring to a light boil before reducing to a simmer.
- After about ten minutes of simmering, add pasta shells and cook according to package instructions (about 8-10 minutes).
- Stir in fresh spinach just before serving. Enjoy!
