  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Stir in diced sweet potatoes and cook for another 5 minutes until slightly softened.
  3. Add rinsed black beans and diced tomatoes (with juices) to the pot. Stir well.
  4. Pour in vegetable broth along with chili powder and cumin. Bring to a simmer; let cook for about 20 minutes until everything is tender.
  5. Taste and adjust seasonings as needed before serving hot.
