  • 4 medium carrots, peeled and chopped (about 2 cups)
  • 2 medium parsnips, peeled and chopped (about 1 cup)
  • 1 large yellow onion, cut into wedges
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions

  2. Peel and chop the carrots and parsnips into one-inch chunks. Cut the onion into wedges.
  3. In a large bowl, toss vegetables with olive oil, salt, pepper, and thyme until well-coated.
  4. Spread the veggies on a baking sheet in a single layer. Roast for 25-30 minutes until golden brown and tender.
  5. Transfer roasted vegetables to a pot, pour in vegetable broth, and bring to a simmer for 10 minutes.
  6. Blend the mixture until smooth using an immersion blender or in batches using a regular blender.
