  • 1 lb beef chuck roast
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red curry paste
  • 1 inch fresh ginger, peeled and minced
  • 4 oz rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • Fresh basil for garnish
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Brown the beef chuck roast in a large pot over medium heat with a splash of oil for about 4-5 minutes per side until browned.
  2. Remove the beef, then sauté minced ginger and any garlic or onions in the same pot until fragrant (about 1 minute).
  3. Return the beef to the pot; add coconut milk and 4 cups of beef broth along with red curry paste. Simmer on low heat for about 1 hour.
  4. Add sliced bell peppers and carrots; cook for an additional 10 minutes.
  5. Cook rice noodles according to package instructions; drain.
  6. Serve soup over noodles and top with fresh basil, cilantro, and lime wedges.
