  • 3 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red or green curry paste
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a large skillet over medium heat, add oil and sauté minced garlic and grated ginger until fragrant.
