- 1 can (15 oz) black beans, rinsed and drained
- 4 small corn or flour tortillas
- 1 ripe avocado, sliced
- 2 tbsp fresh lime juice
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt to taste
- Fresh cilantro for garnish
- ¼ cup sour cream or Greek yogurt (optional)
Instructions
- Cube the pressed tofu into bite-sized pieces.
- In a bowl, mix cumin, chili powder, paprika, and salt. Toss the tofu cubes in the spice mixture until evenly coated.
- Heat a nonstick skillet over medium heat with a splash of oil. Cook the tofu until golden brown on all sides (about 10 minutes).
