- 2 cups enchilada sauce (store-bought or homemade)
- 8 corn tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro (for garnish)
- Sliced jalapeños (for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick spray.
- In a large skillet over medium heat, brown the ground turkey for 5-7 minutes until fully cooked, breaking it apart as it cooks.
- Stir in the enchilada sauce and let it simmer for 3 minutes.
- Spread a thin layer of sauce at the bottom of the baking dish. Layer with tortillas, half of the turkey mixture, and half of the cheese. Repeat until all ingredients are used, ending with cheese on top.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
- Allow to cool slightly before serving with dollops of sour cream, fresh cilantro, and sliced jalapeños on top.
