  • 2 cups mixed wild mushrooms (shiitake, oyster, cremini), chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1/2 cup red wine
  • 1/2 cup heavy cream
  • 2 tsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion until translucent (about 5 minutes).
  2. Add minced garlic and chopped mushrooms. Cook for 8-10 minutes until softened and browned.
  3. Deglaze the pan with red wine, scraping up any bits stuck to the bottom. Simmer for 3–4 minutes.
  4. Stir in vegetable broth and bring to a gentle simmer. Reduce heat; add heavy cream and thyme. Simmer for an additional 10 minutes until slightly thickened.
  5. Season with salt and pepper to taste. Serve warm over pasta or with crusty bread.
