- 1/4 cup Worcestershire sauce
- 1/2 cup unsalted butter (1 stick)
- 2 large sweet onions, sliced
- 3 cups carrots, chopped (about 5 medium carrots)
- 5 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the chuck roast generously with salt and pepper. In a skillet, melt 2 tablespoons of butter over medium-high heat and sear the roast on all sides until browned (about five minutes per side).
- Remove the roast and sauté onions, carrots, and garlic in the same skillet until fragrant.
