Ingredients

  • 4 cups fresh spinach
  • 1 cup dried lentils (green or brown)
  • 1 can (15 oz) low-sodium butter beans
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onion and diced carrot until tender, about 5 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add lentils and vegetable broth; bring to a boil. Reduce heat and simmer until lentils are tender, about 25 minutes.
  4. Once cooked, stir in drained butter beans and allow them to warm through.
  5. Just before serving, add fresh spinach and stir until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Serve hot with crusty bread or crackers.
