- 1 can (15 oz) low-sodium butter beans
- 4 cups low-sodium vegetable broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 medium carrot, diced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Sauté chopped onion and diced carrot until tender, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add lentils and vegetable broth; bring to a boil. Reduce heat and simmer until lentils are tender, about 25 minutes.
- Once cooked, stir in drained butter beans and allow them to warm through.
- Just before serving, add fresh spinach and stir until wilted, about 2 minutes. Season with salt and pepper to taste.
